Q&A with Daffy’s Gin

So there’s a new kid on the gin block, we welcome Daffy’s Gin. We don’t know all that much about Daffy’s Gin apart from that it has a cracking bottle and makes a great G&T!! At 43.4% it is sure to knock the socks off you but in a very good way. Here’s what we found out when we asked them a few questions.

Who are you and what do you produce?

I am Daffy and I produce a gin like no other.

What’s the story behind the product, why did you decide on gin?

Gin has long been overlooked as to how great it has the potential to be on its own.Many people don’t truly appreciate gin because of a badly made G&T in the past or because they have only tried certain gins and been put off. We wanted to create and share a gin that was the most balanced and flavoursome possible, as exceptional as the greatest of any spirit can be when great patience and care is given to its production process.

Where is Daffy’s Gin Made?

Edinburgh, but life is never that simple.. We’re a very international process starting in the north of France with our first wheat distillation then with our botanicals carefully sourced from Scotland, Lebanon and all over the globe we run our second distillation in England to finally bottle with Scottish water in Edinburgh where we have our HQ.

What makes it unique from others out there on the market?

We distill on a copper pot whisky still using very carefully sourced London Dry botanicals. We also distill using some other botanicals not used in other gin such as Lebanese mint. Lebanese mint is a variant of French salad mint grown in the Bekaa Valley of Lebanon. It is this botanical that gives our gin its great length and creamy notes. We steep our botanicals for several days and a run a very long and gentle distillation for 9 hours watching the still for every second and taking great care over cutting the heart of the run. Not forcing the production process supports the balance, complexity and smoothness of Daffy’s.

What food is best served with your product?

We have many great restaurants who are developing exciting pairings for Daffy’s at the moment. White chocolates with freeze dried raspberries have been designed for Daffy’s by Felicity’s Chocolates.. sip, munch, sip bringing a whole other dimension to how to enjoy fine gin! They are available as free gifts with Daffy’s over valentines in our Edinburgh and Glasgow stores.

Describe a typical day for you.

There is no such thing! Talking to customers loving what we have created and mixologists passionately creating exciting cocktails with Daffy’s is always the highlight.

If you could only make one cocktail ever with Daffy’s what would it be and why?

The D&T. Classic, ultimately refreshing and so much flavour.
