Simple gammon and leek pie

It’s that time of year again where we all start ditching the salads and tucking into homely comfort food. I’m a big fan of simple but tasty dishes and this is one of our favourites.  Gammon and leek pie is great. It’s tasty, easy to make and pretty cheap too. It’s a dish that sums up what we love as a family and in these cold winter months it definitely warms you up from the inside out.

Cooking time – 35-40 minutes including prep. | Serves 3-4 people

Ingredients
5-6 large potatoes
250g leeks
400g gammon
525g Carnation cooking creme
Dash of milk for mashing potatoes
Butter
Cheddar cheese for grating on top

Method
1. Peel the potatoes and cut into pieces. Place in a large saucepan and boil for 25-30 minutes.

2. Slice up the leeks and also cut the gammon into pieces, trimming off any fat. I leave the gammon pieces a little larger but cut them to how you prefer.

3. Cook the gammon pieces for 8-10 minutes in a frying pan. Then place in the casserole dish.

4. Next up, in the same frying pan leaving the gammon juices in, melt a little butter and then put the sliced leeks in the frying pan to soften and cook.

5. Pour the Carnation cooking creme into the frying pan over the leeks. Season with salt and pepper. Allow to cook for 5 minutes, gently bubbling.

6. Once that’s cooked, transfer into the casserole dish that you placed the gammon in and give it a good mix.
IMG_2399.JPG7. The potatoes should now be cooked. Strain off the remaining water and they are ready for mashing. I like to put both butter and a little dash of milk into mine when mashing. I find it helps them stick together better.

8. Layer the mashed potatoes over the top, like you would for a cottage pie and then top with grated cheddar cheese. Put as much or as little of the cheese on as you like.

9. Place in a pre-heated oven at 180 °C for 20-25 minutes, until the cheese has gone a golden brown colour and the creme filling is starting to bubble up the sides of the dish.

10. Now the good part!! Time to plate up and tuck in.

The picture above doesn’t do it justice. It’s much tastier than it looks. I cheated a little with the carnation creme but you can make your own white sauce. The carnation creme came in the recent Deugstabox I received and thought this was a good recipe to try it in.
